No-Bake Cheesecake

• Crust

• 1 1/2 cups graham cracker crumbs (about 10 full sheets)
• 1/3 cup butter, melted
• 2 tbsp sugar

• Filling

• 2 (8 oz) packages cream cheese, softened
• 2/3 cup sugar
• 1 tbsp lemon juice
• 1 tsp vanilla extract
• 1 cup cold heavy cream
• Fresh berries or cherry pie filling, for topping (optional)

1. 1Mix the graham crumbs, melted butter and sugar, then press firmly into the bottom and up the sides of a 9-inch pie plate. Chill while you make the filling.
2. 2Beat the cream cheese, sugar, lemon juice and vanilla until completely smooth, about 2 minutes.
3. 3In another bowl, whip the cream to stiff peaks. Gently fold it into the cream cheese mixture.
4. 4Spread the filling into the crust and smooth the top.
5. 5Chill at least 6 hours, or overnight, until set. Top with fruit just before serving.
