Classic Meatloaf

• 2 lb ground beef (85% lean)
• 1 small onion, finely chopped
• 2 large eggs
• 3/4 cup breadcrumbs
• 1/2 cup milk
• 2 tbsp ketchup
• 1 tbsp Worcestershire sauce
• 1 1/2 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp garlic powder

• Glaze

• 1/2 cup ketchup
• 2 tbsp brown sugar
• 1 tbsp apple cider vinegar

1. 1Heat the oven to 375°F and line a rimmed baking sheet with foil.
2. 2In a large bowl, mix the breadcrumbs and milk and let them soak 2 minutes. Add the rest of the meatloaf ingredients and mix gently with your hands until just combined.
3. 3Shape into a loaf about 9 x 5 inches on the baking sheet (it browns better than in a loaf pan).
4. 4Stir together the glaze and brush half of it over the loaf.
5. 5Bake 45 minutes, brush with the remaining glaze, and bake 10–15 minutes more, until the center reaches 160°F.
6. 6Rest 10 minutes before slicing.
