Snowball Cookies

• 1 cup butter, softened
• 1/2 cup powdered sugar, plus 1 1/2 cups for rolling
• 1 tsp vanilla extract
• 2 1/4 cups all-purpose flour
• 1/4 tsp salt
• 3/4 cup finely chopped pecans or walnuts

1. 1Heat the oven to 350°F and line baking sheets with parchment.
2. 2Beat the butter, 1/2 cup powdered sugar and vanilla until creamy.
3. 3Mix in the flour and salt, then the nuts, until a soft dough forms.
4. 4Roll into 1-inch balls and place 1 inch apart. Bake 12–14 minutes, until set and just lightly golden on the bottom.
5. 5Cool 5 minutes, then roll the warm cookies in powdered sugar. Cool completely and roll again for a snowy coat.
