Crispy Homemade Waffles

• 2 cups all-purpose flour
• 2 tbsp sugar
• 1 tbsp baking powder
• 1/2 tsp salt
• 2 large eggs
• 1 3/4 cups milk
• 1/2 cup vegetable oil or melted butter
• 1 tsp vanilla extract
• Maple syrup and berries, for serving

1. 1Heat your waffle iron. Heat the oven to 200°F to keep finished waffles warm.
2. 2Whisk the flour, sugar, baking powder and salt in a large bowl.
3. 3Whisk the eggs, milk, oil and vanilla in another bowl, then pour into the dry ingredients and stir until just combined.
4. 4Lightly grease the waffle iron and add enough batter to cover about three-quarters of the grid. Cook until golden and crisp, usually 4–5 minutes or until the steam mostly stops.
5. 5Keep finished waffles in a single layer on a rack in the warm oven (stacking makes them soggy). Serve with syrup and berries.
