Cut-Out Sugar Cookies with Easy Icing

• Cookies

• 1 cup butter, softened
• 1 cup sugar
• 1 large egg
• 1 1/2 tsp vanilla extract
• 3 cups all-purpose flour
• 1 tsp baking powder
• 1/2 tsp salt

• Icing

• 3 cups powdered sugar
• 3–4 tbsp milk
• 2 tbsp light corn syrup
• 1/2 tsp vanilla extract
• Food coloring and sprinkles

1. 1Beat the butter and sugar until fluffy, about 2 minutes. Beat in the egg and vanilla.
2. 2Mix in the flour, baking powder and salt until a dough forms. Divide in half, flatten into discs, wrap and chill 1 hour.
3. 3Heat the oven to 350°F and line baking sheets with parchment.
4. 4Roll the dough 1/4 inch thick on a floured counter and cut out shapes. Bake 8–10 minutes, until the edges are just barely golden. Cool completely.
5. 5Whisk the icing ingredients until smooth and thick but spreadable, adding milk a little at a time. Tint with food coloring.
6. 6Spread or pipe onto the cookies, add sprinkles, and let dry 2–4 hours until set.
